Ok important things first: here is a recipe for marshmallow fluff: take however much fluid whipping cream you plan to use for this recipe and whip it. Once it is mostly stiff but still slightly pourable (soft peaks) you’ll sweeten it with whatever you like (I’m the sugar free banana syrup type) and then start to sift in small amounts of xanthan gum until it takes on the texture you like. Bonus points if you get your in-house audio engineer to sift it in – it’s a lot easier with 4 hands! You will probably need less than a tablespoon so go gently!
